Maple Glazed Broiled Salmon

Maple Glazed Broiled Salmon

Maple Glazed Salmon is one of my most requested salmon dishes. The combination of caramelized maple syrup and ginger crust combined with the savory flavor of red pepper, garlic and paprika is delicious. Brown on the outside and moist on the inside, this is a simple, flavorful, quick dish that is sure to please both adults and children. It pairs well with roasted asparagus and baby garlic roasted potatoes as well as rice or any of your favorite grains. Simmer any leftover spices and maple syrup for a few minutes over low heat, or make a fresh batch for a delicious sauce for your salmon and side dishes.

So much is written and talked about when it comes to fish. While ‘wild’ is considered the most flavorful and healthiest, organizations like Seafood Watch do recommend certain farmed salmon from the Atlantic to be ‘Best Choice’ or ‘Good Alternative’. Take a look at www.seafoodwatch.org when considering which seafood to purchase.

Equipment

  • sheet pan
  • parchment paper

Ingredients

  • 1 tsp garlic powder
  • 1/2 tsp sea salt
  • 1/2 tsp paprika
  • 1/4 tsp red pepper flakes. Can increase or decrease according to preference.
  • 1 tbs grapeseed oil. Can substitute with any neutral oil.
  • 2 tbs pure maple syrup
  • 2 tsp freshly grated ginger
  • 4 5-6 oz each, salmon fillets
  • 1 tbs sesame seeds
  • 1 tbs Italian parsley leaves, rinsed, dried and coarsley chopped.
  • 1 lemon, cut into 4 wedges.

Instructions

  • Preheat oven to broil. Set oven rack at second highest shelf from top.
  • Line a baking sheet with parchment paper.
  • Rinse salmon fillets under cold running water. Pat dry with paper towel or a clean dish towel. Place on prepared baking sheet, skin side down and let rest at room temperature for a few minutes until ready to use.
  • In a small bowl combine dry spices. Set aside.
  • Spread a thin layer of grapeseed oil on both sides of salmon.
  • Spread the spice mixture evenly onto each fillet and place on prepared baking sheet.
  • Broil for 5 minutes.
  • While salmon is in the oven, In a separate bowl, combine the maple syrup and ginger.
  • Remove from oven, brush each fillet with the maple syrup and ginger.
  • Return to oven and broil for several minutes.
  • Salmon is cooked to medium If the flesh of the salmon flakes, it separates easily along the white lines that run across the fillet when gently pressed down on the top with a fork or your finger and is translucent on the inside. Alternatively, it is cooked to medium when the internal temperature is 130ºF, taken with a thermometer. The FDA recommends cooking fish to an internal temperature of 145ºF, however this will result in salmon that is dried out as it continues to cook well after it is removed from the oven..
  • Let stand for 5 minutes before serving. Garnish with sesame seeds, chopped parsley and lemon wedges.
